Soil Profile
The composition of the soil is clay over limestone, and its lithologic nature is variable depending on the area of origin of the same, factor that favours its own diversity and agricultural profiting.
The hight exceeds 600 metres above sea level, consequently its climate is adequate for the production of high quality wines: a Mediterranean climate with continental degradation, clearly marked season and important thermal differences (daily and seasonal), circumstance that is hightly favourable for the production of aromas.
Harvest Method
 Traditional handmade and mechanized harvesting. When harvest time comes they start doing surveys in the field to be analyzed in the laboratory to establish the optimal time of fruit ripening.
